Two Hits.

So this weekend I have been a cooking maniac. Seriously. We tried out two new recipes from Mrs. Rikki Hein and they were both such a hit! So, I thought I would share will all of you. :)

First off were chicken burritos/tacos.

Guacamole:
2 avocados
2 serrano chiles, seeded and finely chopped
3 TB. onion, finely chopped
1 clove garlic
1 small tomato, diced
half of a lime’s juice
handful of cilantro
kosher (or sea) salt

-Mash all in a bowl and enjoy!


Tacos:
1 lb. beef or chicken, in small bite-size pieces
1 packet of Sazon or Fajita seasoning
handful of cilantro
olive oil

-Combine everything but olive oil in a bowl. Saute in olive oil until done. Serve with warmed corn tortillas


Cilantro-Lime Rice:
Make regular rice according to its package. Add in some lime juice and chopped cilantro. Voila!




Next off were homemade chicken pot pies. Thats right, homemade. They were to die for!
Here's all the goodness.

Chicken Pot Pie

Ingredients:
6 T. butter
1 c. diced onions
1/2 c. diced celery
6 T. flour
2 c. chicken broth
1 c. half and half
2 c. blanched potatoes, blanched
1 c. diced carrots, blanched
1 c. sweet peas
2 c. shredded cooked chicken
2 T. chopped parsley
2 pie crusts
salt and pepper
** I half-ed this recipe and it was perfect for our two bowls pictured below.
Directions:
Preheat oven to 400. Grease square baking dish (or little ramekins/bowls). In a large saute pot, melt butter. Add onions and celery; saute 2 minutes. Season with salt and pepper. Stir in flour and cook 4 minutes. Add broth and cook 4-6 minutes until thick. Stir in half and half and cook another 4 minutes. Season with salt and pepper. Stir in everything else. Turn off heat and mix well. Line the dish with one pie crust. Add filling. Top with second crust. Place on a baking sheet and bake for 25-30 minutes.
P.S. This was our Valentine's Day meal, which explains the hearts :)
